1. I am married. To the most amazing man out there, Andrew. We promised our forever to each other October 1, 2010 and have enjoyed all the choas of our life together so far.2. I am a Christian. Mommy Mondays - Recipe Rescue

My son has suddenly hit a phase where he'll only eat foods that are in the pizza, spaghetti and chicken nugget family.

I'm a little frustrated with it because he used to be the BEST eater as a baby!  Now I'll try to give him something new to try and it ends up on the floor and in the dog's mouth.

But another teacher I work with (Thanks Megan!) makes these little English Muffin Pizzas for her 3 year old and she loves them!  So I thought we'd give them a try! 

Prep time is 5 minutes and cook time is about 10- plus the ingredients you need are super cheap.

You'll need:

• Pizza Sauce -- $0.85
• Mozzarella cheese - on sale this week for $2.00 (after my $0.55 coupon from SS 1/28)
• English Muffins -- on sale this week for $1

 Total cost of this meal -  $3.80 and if you've got a small family like us, you can usually stretch it out to about 2 meals because each muffin makes 2 pizzas!

Here's how to make your Mini English Muffin Pizzas
1.  Preheat your oven to 350 degrees.

2.  Spoon out pizza sauce and cover muffins with cheese. 

 

3.  Bake for about 10-12 minutes -- until cheese is melted.  Then....

 Taaaa-da!!

Super easy moms -- cooking is seriously the last thing on my mind after a long day at school.  

These pizzas are so easy and really good too!

 He's actually eating them -- even though they are in the pizza family, I feel a little bit better using whole wheat muffins and skim milk cheese.

Target Trip!

Did all of you go out and get your Revlon at Target like we told you??

I got mine! With my $2 off Target Revlon coupon (coupons.com) and my $1 off manufacturer coupon, I scored this bottle of nailpolish for only $.99! The Target coupon is still available on coupons.com! I printed another one so I am off to Target tonight to grab myself another bottle!

And, while I was there I found a Target coupon hidden in my Target coupon file . . .  $1.00 off Method Cleaning Product. I matched this up with a $1.00 off Method Dish Detergent manufacturer coupon and scored this for only $.49! I am glad i caught the sale because it ended yesterday!

Mommy Mondays - Toddler Tantrums

Michele and I both have tots who are reaching that favorable stage.  

You know, the screaming when they don't get their way, throwing the head and body back when you try to pick them up and the so-not-going-shopping-with-you-anymore-mom stage.

But in all honesty, my son is really so much fun when he isn't throwing these fits. 

The face is just so kissable right?

Well, then we have those moments where in reality I know he is thinking,
"It's my way or the highway suckers!"

Like when he refused to quit standing on the table:

Or when he was adamant about pushing his toy bucket over to the fireplace mantle so he could climb into it:

My calm mommy mantra is starting to take a huge beating here.

So what have we tried to help disable these tantrums and tribulations?
1.  A stern "no."  
 However, I feel like it is always coming from my mouth and he really couldn't care less that I'm telling him to stop.

2.  So we added a quick "spank" to the bottom.  
(Please note that I only endorse spanking if you're mind and body are in control of the situation!)
The outcome? 
 He turned around to look at me...and then spanked himself right back.

3.  Remembering that his doctor told me to try timeouts if I was there with him and only for a brief moment, I tried one out. 
But the kid outright laughed and thought it was a mommy game.

Finally, I have reverted back to the "no" however I've started using a calm voice, like it's no big deal, and totally redirecting his attention to something else.  
Honestly, this seems to be working the best.  But there have been a few times where a little "butt swat" have been needed for extra enforcement


My question is to you moms, what are your best methods of dealing with these toddler tantrums? 

My son is a very busy boy - always on the move!  And I know these behaviors come with the territory, so share with us your best tips on how to solve "The Tale of the Toddler Tantrums."

Because this face can be just too cute to handle at times!
