My son has suddenly hit a phase where he'll only eat foods that are in the pizza, spaghetti and chicken nugget family.

I'm a little frustrated with it because he used to be the BEST eater as a baby!  Now I'll try to give him something new to try and it ends up on the floor and in the dog's mouth.

But another teacher I work with (Thanks Megan!) makes these little English Muffin Pizzas for her 3 year old and she loves them!  So I thought we'd give them a try! 

Prep time is 5 minutes and cook time is about 10- plus the ingredients you need are super cheap.

You'll need:
  • Pizza Sauce -- $0.85
  • Mozzarella cheese - on sale this week for $2.00 (after my $0.55 coupon from SS 1/28)
  • English Muffins -- on sale this week for $1
     Total cost of this meal -  $3.80 and if you've got a small family like us, you can usually stretch it out to about 2 meals because each muffin makes 2 pizzas!


    Here's how to make your Mini English Muffin Pizzas
    1.  Preheat your oven to 350 degrees.

    2.  Spoon out pizza sauce and cover muffins with cheese. 


    3.  Bake for about 10-12 minutes -- until cheese is melted.  Then....

     Taaaa-da!!

      Super easy moms -- cooking is seriously the last thing on my mind after a long day at school.  
      These pizzas are so easy and really good too!

       He's actually eating them -- even though they are in the pizza family, I feel a little bit better using whole wheat muffins and skim milk cheese.
