Being a mom, wife and a full time teacher is exhausting enough!  The last thing that I honestly want to do is slave over a good home cooked dinner.  I try to cook healthy and well balanced, but sometimes that frozen pizza is just oh, so easy.  So I thought I'd share some quick and easy recipes every once in awhile in our Mommy Monday posts that make your job just that much easier!  I feel your me.

My friend (and new mom herself - love you baby Lorelai!) shared this easy recipe for meatballs that literally takes 5 minutes to prepare and you can bake it while the kids do homework or play in their new tent (like mine).

You'll need:
--1lb Ground Turkey or Ground Beef - we I prefer ground turkey in our house!
--1 box of stuffing mix
--1 egg
--1/2 cup of water
--Salt and Pepper
--Garlic Powder

--Preheat the oven to 375.
--Mix together in a bowl the meat, stuffing mix, water and eggs -- you'll need to get those hands nice and dirty!
--Add seasonings and continue to mix.
--Using the mixture, create medium sized balls and place them on a cooking sheet.  I'll usually make mine good sized so that we have about 10-12 meatballs.
--Place the cookie sheet in the oven and cook for about 30 - 35 minutes.

I'll usually make some of those instant mashed potatoes and warm up some gravy that you can get in a jar.  Throw some green beans or corn on the side and you've got a well balanced meal with just a little effort!  The best part about this meal is that it not only tastes fabulous, but it looks like you became Betty Crocker all afternoon to make it.
