The holiday is over (and Spring Break..wah!), which means you are dealing with those leftovers, right?

You know which ones I'm talking about...


Ham baby!  

So what do you do with your hunk of burning pig that is wasting space in your fridge?

MAKE LEFTOVERS! duh.

Super easy, super quick and a super yummy meal for your family -- like I say, 
"Work smarter, not harder."

Let me share a few meals that our family enjoys:

Scalloped Potatoes and Ham
So I scored this box for around $0.50.  Add milk, water, butter and cut some ham chunks.  Mix it together in a small pan and bake for 30 minutes.  Throw together a quick salad and you've got a fast meal for next to nothing.  My husband LOVES me when I make this for me (oh the little things).


Grilled Ham and Cheese 
Just a meaty twist to this classic sandwich!  I slice up the ham and throw it on the bread with the cheese.  Then, I grill them together and the melted cheese on the ham is oh so delish.  Toss a couple of chopped veggies and fruit on the side and I'd say this makes a perfect meal for the fam.


Ham And Eggs
Maybe they aren't green, but eggs and ham make quite the pair, wouldn't you agree?  Scrambled, fried or over easy - your choice!  I love to make the KaitMcMuffin sandwich.  
I probably should go patent that right now...


Maybe you are seriously over ham.   
(I was a minute ago after I realized I was eating ham and watching the cartoon, Olivia, with my son. Not going to lie, felt super guilty about that one.)

Throw together a super easy Ham and Bean soup to throw in the freezer for a rainy day.  

You need:
-Ham
-2 cans of beans -- I prefer kidney and chickpeas
-1 can  of chicken broth
-1 small onion sliced up
-Your choice of seasoning

1.  Mix together all the listed ingredients above in your crockpot.  (You can use a pot on the stove, but I prefer to cook when I'm at work, so I love my crockpot for that part!)

2.  Cook on low for 4-6 hours.

3.  Enjoy!  Freeze any leftovers for an on-the-go meal night.

Don't let that ham go to waste!  Save yourself the pain and strife of cooking and use the leftovers to create easy dishes that your family will enjoy.  Trust me, from one busy mom to the next, you'll be glad you did!
